Chef-owner of Le Pavillon Restaurant, Claude Guermont, was born in Normandy, France. At the age of 14
he began his culinary apprenticeship at the Hotel de Ville in Avranche. After completeing his apprenticeship,
Claude continued to work in France with top Chefs in Paris and on the French Riviera. In 1971 Claude moved
to the United States and in 1977 became the Chef-Instructor at the Escoffier Restaurant of the Culinary
Institute of America. In December of 1980 Chef Guermont opened Le Pavillon Restaruant in
Poughkeepsie, NY. Additionally, Claude Guermont is co-author of the award winning cookbook
“The Norman Table”.

holiday parties, rehearsal dinners, and weddings. Special menus available for groups priced accordingly

Open Monday and Tuesday or for lunch for small groups by reservation only.
